Succulent Catfish Sandwich!

Cooking light magazine has some delectable and mouth watering recipes that are healthy for you! What could be better? Last night I made the open-faced blackened catfish sandwiches and let me tell you, it was so goooood. It is only 362 calories and you get a lot of food and a lot of great flavor. You have to try it! I will be posting two more recipes from the most recent cooking light magazine that I am trying for dinner tonight and tomorrow night! If you don't get cooking light magazine I would think about getting it because all of their healthy and yummy recipes have been absolutely delicious! So go and make this amazing and easy catfish sandwich, you won't be disappointed! (It's almost like a healthy version of a catfish po-boy! yum!)




Open-Faced Blackened Catfish Sandwiches

Ingredients:
1 3/4 Teaspoon of Paprika
1 Teaspoon of Dried Oregano
3/4 Teaspoon of Ground Red Pepper
1/4 Teaspoon of Salt
1/4 Teaspoon of Ground Black Pepper
4 (6-ounce) Catfish Fillets
2 Teaspoons of Olive Oil
1/3 Cup of Plain Fat-Free Greek Yogurt
3 Tablespoons of Fresh Lime Juice
1 Tablespoon of Honey
2 Cups of Packaged Cabbage-Carrot Coleslaw
1 Cup Chopped Fresh Cilantro
4 (1-ounce) Slices of Sourdough Bread, Toasted

Directions:
1. Combine first 5 ingredients in a small bowl. Sprinkle both sides of fish with paprika mixture. Heat a large cast-iron skillet(Does not have to be cast iron) Add oil to pan; swirl to coat. Add fish; cook 4 minutes on each side or until desired degree of doneness.

2. Combine yogurt, juice, honey in a medium bowl. Add cabbage and cilantro; toss well to coat (if you make the sauce ahead of time, wait to put in the cabbage and cilantro in so they do not get mushy) Top each toasted bread slice with about 1/2 cup of slaw and 1 catfish fillet. Top each fillet with remaining slaw. 

Makes 4 servings.
